Our all time favourite prepared by my mom filled with 101% loving heart and patience. She prefer soft and gooey yam which are stir together (till it mashed) with the flour mixtures before steaming.
The above tray of yam cake from the hot wok caught my attention when I wanted to have my breakfast. Immediately, I took out my hand phone and captured this photo. It looks pale and unpalatable right...but once you had a bite, you would fall in love with this staple instantly!
For Garnishing
FRY WITH OIL: sliced shallots till aromatic, follow by dried shrimps (chopped) till fragrant.
cut spring onions and red chillies (optional)
For The Cake
FRY WITH OIL: dried shrimps, diced/cubes yam (partially steamed/cooked) and sliced shallots - set aside
MIX ALL TILL SMOOTH: rice flour, corn starch, salt, five spice powder, pepper, MSG (optional), sesame oil (optional) and sufficient water
STIR SLOWLY (under low fire): flour mixture and all fried stuffs until the yam in the form of mashed potatoes and forms a thick paste.
STEAM FOR APPROX 40 MINS: Pour mixture into a metal tray and steam for 40 minutes or until cooked.
Decorate with garnishing and serve with/without chillies sauce.
My MIL makes very nice yam cake too... Yummmm!!!!
