COLOURFUL SWEET POTATOES SOUP

What's for tea time?
These three colorful boiled potatoes i.e purple (Japanese) , orange and yellow (local) are sufficient to make few bowls of sweet soup for few of us in the office.

*potatoes are rich in potassium and helps to prevent cancer, control blood pressure and assist in weight control by feeling fuller longer*



1. When the water is boiling, add in few slices of old ginger and let it simmer for 5 minutes.
2. Put in diced potatoes and leave it to boil for 5 -10 minutes (for steamed /pre boiled potatoes) or till the potatoes is cooked (for raw potatoes).
3. Add in few tablespoon of raw sugar cane or white sugar.

*ginger is a natural cure for common cold and helps to get rid of wind inside the body*

look at the purplish colour in the soup...natural source from Japanese potatoes
