In Chinese homes, soups are usually boiled using one whole chicken ('retired' chicken or farm chicken) or pork ribs/lean meat to produce sweet and flavoring taste. One trick to get rid of unpleasant smell is to boil the chicken cutlet or pork for about 10 minutes and skim off fat and foam from the surfaces of soups.
